Looking for that elegant yet simple breakfast or brunch that treats your family to a delectable spring or summer platter? Just beat up a few eggs, milk, flour, and salt, whisk it in the oven, and pull out a surprise that has risen like a souffle!
A pop-cake is an 8-inch sized version of the famous popovers served with prime rib on a cold winter’s night. The breakfast treat, however, does not require heating up your kitchen for a long time. Within 20 minutes, maybe a slight bit longer, you have a gourmet-looking dish to serve your family or guests. This has become a tradition at our home for all of our friends who come from out of town to visit for a few days. Top this scrumptious delight with fresh fruit such as strawberries, blueberries, or the fruit of your choice. Squeeze a tang of lemon juice on the sliced portions, top with fruit, and finish off with powdered sugar or some have chosen whipped cream.
1 Cup of milk
1 Cup of flour
1 tsp. of salt
Heat the oven to 425 degrees. Place 2 Tbls. of butter in an 8-inch round stoneware baking pan or an aluminum pan or even an 8-inch cast iron skillet. Put the baking dish in the oven just til the butter melts–do not let it brown. While waiting for the butter, lightly mix up the above ingredients with an electric mixer. Pour into the pan when ready (there still may be some small lumps in the batter). Let cook for 20 minutes or a little longer until the sides have puffed high and are a deep golden brown. Quickly remove the pop-cake from the oven to the table because it deflates in front of your eyes, and you want your guests to see it crowned like a queen! Slice for your guests and serve with fresh fruit, a squeeze of lemon juice, and some powdered sugar. Or come up with your own delightful toppings and send your suggestions to us. Enjoy!
