Not too Sloppy for Our Gang
Summer calls for quick and easy recipes as the heat moves in and the fun takes us outdoors. One of our family’s favorites is Sloppy Joes. We actually like this anytime of the year, but when I’m rushed or just too tired to cook, this makes a healthy alternative to fast food. I also like this recipe because it uses few, if any, artificial additives (except for what might be in the soup).
SLOPPY JOES
For our hungry crew we use 2 lbs. of extra lean ground mean (usually 93% lean).
1/2 C chopped onions or dried minced onion
2 cans of Campbell’s Tomato Soup (10 1/2 oz size)
2 cans of Campbell’s Tomato Soup (10 1/2 oz size)
2 TBL brown sugar
2 TBL red wine vinegar
2 tsp. chili powder
2 tsp. Worcestershire sauce
Brown the meat and onions on a high heat. Drain off the fat. Add the tomato soup. Then add the brown sugar, the chili powder, the red wine vinegar, and the Worcestershire sauce. Stir all into the meat. Cook on simmer for 5 minutes.
Grate the cheddar cheese while meat simmers and warm up the hamburger buns that form the foundation for this meal.
Fresh chopped onion can also be added to the top.
Ready to serve. Scoop meat onto buns and top with cheese (onions if you like). Serve with tater tots, fried potatoes, or chips and salad.
